Clostridium Botulinum Recall: Paxton & Whitfield Pots of Pork

Intro

Paxton & Whitfield recalls their Pots of Pork

Paxton & Whitfield are recalling their Classic Shredded Pork and Shredded Port with Sloe Gin because of concerns over the manufacturer’s procedures in place to control Clostridium botulinum.

Cornish Charcuterie

Their manufacturer, Cornish Charcuterie, had an equipment malfunction, which has led to some of their produce not being heated enough to cook foods to a safe temperature in order to control the bacterium, Clostridium Botulinum.

They have had to recall all their own products, pates, rillettes and Westcountry Duck Confit. In addition, pates and rillettes manufactured by them, but sold by Chatsworth House under the Chatsworth House label, have also had to be recalled.

Botulism

Botulism, the illness caused by the bacterium Clostridium Botulinum, is a rare, but often fatal condition. According to the World Health Organisation, Clostridium Botulinum toxins are one of the most lethal substances known, blocking nerve functions which can lead to respiratory failure and muscular paralysis.

Clostridium

Clostridium Botulinum is a bacterium that, forms into spores when temperatures become extreme. This allows them to survive high temperatures that would normally kill off non-spore forming bacteria that are a threat to humans. In the absence of oxygen they germinate, grow and then excrete toxins. Those toxins are then ingested via contaminated food, which affects the body's nervous system, causing paralysis, respiratory failure and often death.

This is why it is so important to control Clostridium Botulinum.
