What is the difference between Use By and Best Before Dates?

Use By dates are for high risk foods. These are foods in which bacteria readily multiply because all their conditions for growth are met. Bacteria need Warmth, Moisture, Food and Time in order to multiply, and high risk foods are called high risk foods because everything the bacteria need are right there, in those foods. This means that it doesn't take long for these foods to become poisonous for consumption.

Best Before dates for for all other types of foods. The risk of bacterial growth is low, because not everything the bacteria need are right there - though this can change, for instance, flour becoming wet. However, many foods do lose their flavour, texture or freshness, and best quality can not be guaranteed.
